EAT. Feijoa & Cinnamon Muffins

Many of our au pairs who come from overseas have never come
across feijoas before. A feijoa tastes much like a guava and once
you have a try, you'll be coming back for more. They're
predominantly found in New Zealand and many families grow the trees
in their backyard. The months you'll be seeing them drop from trees
and rolling around in the neighbourhood pavements are from May and
June. Pick it up, cut it in half and scoop the flesh out with a
spoon. Yum!
There are a variety of ways you can eat these feijoas. One
recipe we have for you is the simple Feijoa and Cinnamon Muffin
recipe. It's easy to make and delicious, so give it a go with your
children at home.
Feijoa & Cinnamon Muffin Recipe
Ingredients:

- 75 g butter
- 1 cup chopped up feijoas
- 2 eggs
- ¾ cup sugar
- 2 tsp baking powder
- 2 cups flour
- Milk to mix (or use orange juice/fresh lemon juice)
Topping:
- 1 tsp cinnamon
- 1 tbspn raw sugar
Method
1. Cut feijoas in half and scoop out flesh with a spoon
2. Chop up flesh to small pieces to overfill a cup
3. Melt butter in a bowl


4. Add feijoas and stir
5. Add unbeaten eggs and combine
6. Fold in dry ingredients
7. Add small amounts milk (or juice) to achieve soft
consistency
8. Spoon into muffin tins
9. Mix cinnamon + raw sugar then sprinkle over muffins


Bake in 200 degree oven for 15 minutes or until brown on top
